  • 1 teaspoon shallot (finely chopped, white, or red onion)
  • 1 teaspoon honey
  • 1 pinch kosher salt
  • 1/4 cup extra-virgin olive oil
  • 1/2 red cabbage (a small, cored and finely sliced)
  • 1 handful Tuscan kale
  • 1 handful fresh spinach
  • 1/2 red pepper (julienned)
  • 1 handful almonds (coarsely chopped)
  • 4 kumquats (seeded and thinly sliced)
