- 1 butternut squash (small or medium, peeled, cut and diced small)
- 1 cup farro (cooked, or just make the whole package like I did and freeze leftovers. Cook according to package directions, then cool.)
- 1 handful fresh spinach
- 1/2 log honey goat cheese (or regular, crumbled)
- pecans

- fresh lemon juice
- extra-virgin olive oil
- 1 garlic clove (finely grated)

I make this all the time. Sometimes I use barley instead of farro. Also if you're lucky enough to find a pumpkin goat cheese it's perfection with this. I also add the juice from the pan of roasted grapes to the dressing.
