  • 1/3 cup red wine vinegar
  • 1 clove garlic (crushed)
  • 1/2 teaspoon sugar
  • 6 ounces arugula leaves (baby)
  • 6 ounces baby spinach leaves
  • 2 cups flat leaf parsley leaves (loosely packed)
  • 1/4 red cabbage (medium, finely shredded)
  • 1/2 red onion (medium, thinly sliced)

    Directions

    1. For the dressing, combine oil, vinegar, garlic and sugar in a small bowl. Season to taste with salt and pepper.
    2. Combine remaining ingredients in a large bowl. Just before serving, add dressing and toss well.
