- 2 Tbsp. olive oil
- 2 beets (medium-sized purple, rinsed, scrubbed and cut into 1/2 inch chunks)
- 1 sweet potato (medium-sized, rinsed, scrubbed and cut into 1/2 inch chunks)
- 1 broccoli (medium-sized head of, rinsed and cut into florets)
- 1/4 cup raw cashews (lightly toasted)
- 1 bunch cilantro (tough stems removed and roughly chopped)
- cracked black pepper
- 1/3 cup orange juice
- 1 Tbsp. toasted sesame oil (you can sub olive oil here if need be)
- 2 Tbsp. white miso paste (mellow, organic and GMO free)
- 1 1/2 Tbsp. tahini
- 1 Tbsp. rice vinegar
- 1 tsp. fresh ginger (minced)
- 1 clove garlic (minced)
- 2 tsp. honey (or pure maple syrup)
- water (to thin if necessary)
