This recipe is a winner! The meat has a gorgeous flavor with a rich, velvety texture. The au jus is also amazing. Use it as a dip or to make a flavorful gravy. This is comfort food at its best.

The first two times I made this it was moist, tender and delicious. The third time, not so much: it was tough and ended up being a waste of a good looking chuck roast. This transpired over the course of about a year. I am trying it again for a fourth time today, and I adhered very strictly to the recipe, with the exception of the use of dried thyme. I generally keep fresh thyme on hand but I am out today and we really have a hankering for a roast on Super Bowl Sunday! I will also only cook the beef for about 2 1/4 - 2 1/2 hours although I usually prefer a well done roast. So, wish me luck with this kitchen endeavor. I’ll let you know how it turns out.
