Ingredients

- 1/2 cup wild rice
- 1 tsp. fresh thyme leaves
- 2/3 cup sliced carrots (~1/4" thick)
- 1 cup kale (chopped, ~1" square pieces)
- 1 Tbsp. butter
- 1 Tbsp. red onion (minced)
- 1 clove garlic (sliced thinly)
- 1 Tbsp. fresh basil (chopped)
- 1 tsp. fresh dill (chopped)
- 1 Tbsp. fresh parsley (chopped)
- 1 tsp. balsamic vinegar
- 1/4 tsp. salt
- freshly ground black pepper (to taste)

Directions
- Bring 1 +1/4 cups water to a boil in a small saucepan; stir in rice, thyme, salt, & pepper. Cover, reduce heat, and simmer for 45 minutes.
- Meanwhile, chop the vegetables and herbs.
- When about 5 minutes remain of rice cook time, melt butter in a non-stick skillet. Add carrots, kale, onion, and garlic; sauté at medium heat 3-4 minutes until onion & garlic begin to soften.
- Stir in balsamic vinegar; add rice & mix well.
- Enjoy!
