- 1 yellow onion (chopped)
- 2 cups mushrooms (assorted, chopped, I used reconstituted shitake, oyster & porcini–you can also use fresh if available)
- 1/2 cup chicken broth (or mushroom water if you reconstituted them–strain through a coffee filter first to get out any grit)
- 1/2 cup dry white wine
- 8 cups Swiss chard (chopped, mostly leaves)
- 4 oz. goat cheese
- 1/2 cup panko bread crumbs
- 1/2 tsp. fresh thyme leaves
- pepper
- salt
