- 12 oz. chestnut mushrooms (similar to cremini mushrooms)
- 12 oz. shiitake mushrooms
- 12 oz. shimeji mushrooms (also known as beech mushrooms)
- 1/4 cup doenjang (Korean fermented soybean paste)
- 4 Tbsp. unsalted butter (softened)
- 1 bunch chives (small)
- 1 tsp. porcini powder
- 2 Tbsp. Regalis® Truffle Sauce (or substitute with mushroom tapenade; for filling)
- 1/2 cup Yugeta® Double Brewed Soy Sauce (or substitute with regular soy sauce)
- 2 tsp. caster sugar (also known as superfine sugar)
- 2 tsp. rice vinegar
- 1/2 tsp. Regalis® Truffle Sauce (or substitute with mushroom tapenade; for dipping sauce)
- 1 Tbsp. yuzu juice
- 1 1/2 Tbsp. truffle oil
- 1 Tbsp. mirin (sweet rice wine)
- 1/2 lemon (for juice)
- 50 eggless wonton wrappers (buy at an Asian supermarket)
