- 400 grams cauliflower (roughly 1 head cleaned and dismembered into large pieces)

- 1 pinch salt
- 1 bay leaf
- 3 cups water
- 1/4 cup pine nuts (toasted, optional)
- 1 Tbsp. white miso paste (optional)
- 1 tsp. salt
- 32 oz. unsweetened soy milk (or your favorite non-dairy milk)
- 2 cups shiitake mushrooms (sliced)
- 3 Tbsp. olive oil
- 3/4 tsp. smoked paprika
- 1 tsp. black pepper
- 1 lb. fettuccini (fresh, 453 g = 1 lb. – *see Helpful Tip below)
- 3 Tbsp. olive oil
- 1/2 onion (large, medium diced)
- 2 cloves garlic (sliced thin)
- 1/2 cup peas (fresh or frozen)
- 1/2 cup flat leaf parsley leaves (picked, lightly packed)

- 3 Tbsp. toasted pine nuts
- 1 tsp. chili flakes (red pepper)
