- 4 yellow potatoes (medium, about 1 pound 3 ounces, diced into bite-sized pieces)
- 1 onion (diced)
- 2 Tbsp. minced garlic (about 4 cloves)
- 4 cups chicken stock
- 1/2 bunch kale (stems removed and leaves chopped, 4 cups)
- 1 can coconut milk

- 1 lb. ground pork
- 1 Tbsp. red wine vinegar
- 1 tsp. salt
- 1 tsp. black pepper
- 1 Tbsp. chopped parsley (fresh, or 2 teaspoons dried)
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. dried basil
- 1 tsp. paprika
- 1 1/2 tsp. red pepper flakes
- 1/4 tsp. ground fennel seed (if desired, optional)
- 1 pinch dried oregano
- 1 pinch dried thyme

So good! The sausage recipe was delicious on its own. Nothing tops a yummy meal that is Whole 30 and the kiddo was asking for more before finishing his first bowl. This will go in our meal rotation for sure.

We substituted Whole 30 approved turkey options and the kids INHALED this soup. Hubby absolutely loved it - said it reminded him of a curry in Thailand. I did forget the pepper flakes, but didn’t miss them.
