- 2 zucchini (small)
- 1 red bell pepper (large)
- olive oil (for brushing vegetables)
- herb seasoning (Italian seasoning or other dried, I used Penzey's Pasta Sprinkle)
- italian seasoning (or other dried herb seasoning, I used Penzey's Pasta Sprinkle)
- 1/4 cup sliced green onions (thinly)
- 2 Tbsp. fresh basil (chopped)
- 2 Tbsp. fresh oregano (chopped)
- 4 herbs (or use 4 t chopped fresh, your choice such as parsley, mint, thyme, or chives)
- 1 can black olives (drained and cut in half, 6 oz. drained)
- 1/2 cup feta cheese (crumbled)
- 1/4 cup olive oil
- 2 Tbsp. red wine vinegar
- 1 Tbsp. Dijon mustard
- dried oregano (1/2 tsp.)
