- 1 cup urad dal (whole grain, whole split black lentils)
- 1 1/2 cups parboiled rice
- 1 1/2 cups brown rice
- 1 tsp. fenugreek seeds (optional)
- 1/2 tsp. iodized salt (non-)
- oil (for frying preferably ghee or coconut oil)
- 1 cup unsalted peanuts (whole)
- 10 green chillies (depending on your spice level.)
- 1/4 tsp. coriander seeds (optional. adds great flavor if used.)
- 5 garlic cloves
- salt
- 1 Tbsp. tamarind juice (fresh, optional)
- 1 Tbsp. oil (I used coconut oil)
- 1/4 tsp. black mustard seeds
- 1/4 tsp. cumin (jeera)
- 1/8 tsp. turmeric

- cilantro (for garnishing, optional)

- 1/2 tsp. cumin seeds
- 2 red chillies
- 1 onion (medium, diced)
- Himalayan salt (Pink)
- 1/2 tsp. turmeric
- 1 tsp. ginger garlic paste
- 8 curry leaves
- 2 green chiles (small)
- 5 lb. potatoes (boiled, peeled and cubed)
- 1 bunch cilantro
