- 1/2 tsp. kosher salt
- 2 large eggs
- 1/2 cup extra virgin olive oil
- 1/2 cup unsweetened apple sauce
- 2 tsp. vanilla extract
- 1 apple (large, peeled and grated, about 1.5 cups worth of grated apple)
- 1 cup dark chocolate chips
- 1/2 cup toasted shredded coconut (You can omit this entirely, or substitute with chopped nuts or dried fruit, like cranberries.)
