This is my new favorite waffle recipe! Based on my preferences and what I had on hand, I doubled the banana, added 4 tbsp extra light olive oil, and omitted the stevia, applesauce, and nutmeg. The waffles came out crispy on the outside and moist and fluffy on the inside, with plenty of sweetness from using fully ripe bananas. When I served them up with a dark chocolate drizzle, my toddler couldn't stop saying, "Thank you, Mom!" We were in heaven.
