- 3/4 cup organic cane sugar (I used Florida Crystals Demarara sugar)
- 2 large eggs (at room temperature)
- 1/3 cup extra-virgin olive oil
- 1 tsp. vanilla extract
- 3/4 cup greek yogurt (vanilla, divided)
- 8 Tbsp. grapefruit juice (fresh, divided)
- 1 Tbsp. poppy seeds (plus more for garnish)
- 1/2 cup powdered sugar
