- 1 cup coconut milk (at room temperature)
- 6 large egg whites (¾ cup, at room temperature)
- 2 tsp. vanilla extract
- 1 3/4 cups granulated sugar
- 2 tsp. baking powder
- 1 tsp. kosher salt
- 3/4 cup unsalted butter (softened but still cool)
