- 2 3/4 cups gluten free all purpose flour (I use Bobs Red Mill Gluten-Free 1-to-1 Baking Flour or King Arthur Gluten-Free Flour)
- 1/4 cup coconut flour
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 1 1/4 cups almond milk (or other milk of choice)
- 1 cup honey (or maple syrup, I used half of each)
- 1 cup coconut oil (melted, or butter, use refined if you don't like the coconut flavor)
- 2 eggs
- 2 egg yolks
- 1 tsp. vanilla
- 1/2 cup chocolate chips (for chocolate shavings, optional)
- mint leaves (for garnish, optional)
- 2 cups cherries (fresh, pitted, plus extra whole cherries for topping the cake)
- 2 Tbsp. maple syrup (or honey, or more to taste)
- 2 tsp. arrowroot (or cornstarch mixed with 1 tablespoon water)
- 2 tsp. kirsch (clear cherry brandy, optional)
- 3 egg whites
- 2/3 cup maple syrup (/honey, I used half of each)
- 1 1/2 cups unsalted butter (room temperature)
- 1/2 cup white chocolate (melted, omit for refined sugar free buttercream)
- 1 tsp. vanilla extract
- 1 cup dark chocolate chips
- 1/2 cup coconut cream (thick, I used Trader Joe's Coconut Cream)
