- 14 oz. white chocolate (imported, such as Lindt or Perugina, finely chopped, do not use chips)
- 1 1/3 cups heavy whipping cream (chilled)
- 11 cups cake flour (sifted)
- 11 tsp. baking powder
- 2 1/2 tsp. salt
- 3 cups buttermilk
- 6 Tbsp. frozen orange juice concentrate (thawed)
- 5 Tbsp. vanilla extract
- 1 1/2 cups unsalted butter (3 sticks ,room temperature)
- 6 1/2 cups sugar
- 1 1/2 cups vegetable oil
- 2 1/2 cups egg whites (about 20 large)
- 1/2 tsp. cream of tartar
- 1 pt. fresh strawberries (8, containers ,hulled, halved)
- 2 1/2 pt. fresh blackberries (containers)
- 2 1/2 pt. fresh raspberries (containers)
- 2 1/2 pt. fresh blueberries (containers)
- 1 cup sugar
