- 60 grams vanilla protein powder (I used Jamie Eason Lean Body for Her, or 1/2 cup flour listed below)
- 1/4 cup coconut flour (or 1/2 cup all-purpose, gluten-free blend, oat, or spelt flour)
- 1/4 cup stevia (Pyure organic, blend, or Truvia Baking Blend/Brown Sugar Blend, or 1/2 cup baking stevia, erythritol, or granulated sugar)
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground ginger
- 1/8 tsp. ground cloves
- 1/2 tsp. baking soda
- 1/4 tsp. salt (optional)
- 2/3 cup pure pumpkin (100%, no added sugar)
- 1/4 cup egg whites (2 large)
- 2 Tbsp. buttery spread (melted, I used Earth Balance; can use butter, ghee, or other buttery spread)
- 1/2 tsp. vanilla extract
- 1/4 tsp. maple extract (optional)
- 1/4 cup white chocolate chips (or semi-sweet or dark chocolate chips)
- 1 1/2 tsp. pumpkin pie spice
