Description
Packed with fun additions, these white chocolate lemon muffins are so good you will feel as if you are eating dessert at breakfast time. A classic white muffin is enhanced with the addition of fresh lemon zest and fresh lemon juice for a light citrusy flavor. Ground ginger adds a slightly spicy contrast to the lemon flavor. White chocolate adds a smooth sweetness to the muffin. These muffins are ready in 40 minutes and will quickly disappear as soon as you have taken them out of the oven.
Ingredients
- 50 grams sugar
- 40 grams butter (softened)
- 1 egg
- 100 mL milk
- 1 lemon (zested and juiced)
- 150 grams flour
- 1 pinch salt
- 8 grams baking powder
- 1 tsp. powdered ginger (optional)
- 100 grams white chocolate (finely chunked)
Directions
- Preheat the oven to 160 degrees Celsius.
- Line a muffin tin or grease and flour each individual mold.
- Beat together the sugar and butter until creamy and lighter in color.
