- 1/4 tsp. cayenne pepper (more to taste)
- 1 lb. turkey (ground white meat)
- 31 oz. white beans (such as cannelini, preferably low-sodium, drained and rinsed)
- 4 cups low sodium chicken broth
- 3/4 tsp. dried oregano
- 15.5 oz. hominy (drained and rinsed)

- 1/4 cup nonfat plain greek-style yogurt
- 2 Tbsp. cilantro leaves (chopped fresh)

This chili was delicious! I modified it to use ingredients up. Used 2 lbs of ground Turkey, 2 small cans of green chilies, 6 stalks of celery, 2 small onions, chicken and Turkey stock, 1 can garbanzo beans, garlic, splash of heavy cream, lime zest and juice, 1 can of great Northern beans, 2 zucchini, cumin, coriander, white pepper, 1 cup of finely shredded asiago, a handful of cheddar cheese, added 1 package of wheat gnocchi. Did not use cayenne, hominy or Greek yogurt.

This white chili turned out very good. I did take one poblano out for my family’s taste. I will make this one again soon.
