    experimented with low carb and cactus corn tortillas - worked out great. took awhile for sauce to thicken and ended up adding more flour. also added a second can of chilies for flavor

    Amazing, so simple and looking like my new recipe from here on out..had to omit the heavy cream due to my diet, but yummy-yum!
    This turned out great! I added corn inside the chicken mix and some spices to the sauce :)

    pretty good enchiladas. We really liked it adding some black beans. Also put a little bit of the sauce inside the enchilada, gets so dry otherwise.

    I used a little extra cheese on top and it was very good. The only part I didn’t like was shredding the chicken, it took fooorever. Lol.

    Sooo goood Just make sure if you have for than 4 people you should use more chicken and a bigger sauce pan

    These are a nice change up from traditional enchiladas. I modified mine by adding a lg can of las Palmas green enchilada sauce to the shredded chicken (Costco chicken). it keeps the inside of the enchilada moist

    Delicious! I changed it up a little. I diced (w/o seeds) 1 poblano pepper and one jalapeno pepper with some red onion and garlic and let it simmer in olive oil then I mixed it in with the chicken meat and added to the cheese mixture to fill the tortillas. Wow... but not too spicey.

    Love this recipe a staple in our house. We add more diced chiles and use pepperjack cheese cause we like it spicy.

    My sauce didn't quite thicken up like it probably should've, but this was a hit! I will definitely be making this again 🙂

    Very simple and delicious! My family loved! I added another can of green chiles to the chicken mixture and doubled the cheese

    I make this a lot, but I noticed that if you eat leftovers or freeze half for later, the flour tortillas get gummy. So, next time I am going to try them with corn tortillas. Other than that, this recipe is fantastic!
