Love! Love! Love! this soup!!! Easy, inexpensive and healthy!!! Highly recommend it on a cold day! I enjoyed mine with parmesan cheese and it was delicious!

This was a good simple soup. Ideally, you could add any veggies to it and it would be tasty. I’m thinking about adding some Italian sausage next time.

Good soup recipe! I made this with 1# navy beans soaked overnight. Added extra garlic and carrots and vegetable broth. I, also flavored it with bacon. Cooked for 3 hours and then added the kale for the last hour of cooking. It was delicious and will definitely make it again!

Love this soup! I added cauliflower as well as turmeric, paprika, and red pepper flakes. I usually add a bit more broth as well, simple soup and so tasty!

Added extra garlic and used water + Better Than Bouillon instead of broth. So good!! I can't believe a plain vegetable soup was that yummy. Just FYI I wouldn't add the salt before cooking... wait and see if it needs it at the end.

Good for a side soup but a little lacking as the main course I was looking for. I would modify to sauté garlic first for flavor, as the water from veggies prevented it from frying up. I would also add more seasonings and spice for flavor.
