Very good. I cut the amount of olive oil to 1 tbsp. More than enough to cook bacon, onion and garlic. I also trimmed the bacon a lot, again to lower fat content. I served it with Romano cheese. Not exactly the most filling meal..best for appetizer but really tasty.
