  • 1 pound navy beans (or dried yellow-eye, soaked overnight or quick soaked)
  • 1 onion (large, chopped)
  • 4 cloves garlic (minced)
  • 5 cups water
  • 4 teaspoons smoked paprika (divided)
  • 2 teaspoons dried oregano (divided)
  • 1 1/2 teaspoons ground cumin (divided)
  • 1 teaspoon dried basil
  • 1 pound winter squash (cubed, or pumpkin peeled and cut into 3/4-inch dice, I used butternut)
  • 1 red bell pepper (large, chopped)
  • 1 jalapeño pepper (optional, seeded and finely chopped)
  • 15 ounces diced tomatoes (fire-roasted preferred)
  • 1 teaspoon salt (or to taste)
  • 1 bunch kale (removed from stems and sliced, about 12 ounces)
  • 1 cup frozen corn (or fresh, optional)
  • 1/2 cup fresh basil (chopped)

    Tasty, healthy and super easy to make. My only criticism is that the liquid is very thin, but that is very easily remedied! Mine also lacked a little something but I think that’s because I left out the jalapeño, so next time I will add it for sure. This is a great winter meal and the recipe would easily serve 6 people

    Love this! So healthy but ridiculously tasty! Filling and made the whole family happy, we couldn't get enough. The recipe takes a long time, so good to make when you have help. Will make this again!
