- 1/4 cup extra-virgin olive oil (more for drizzling)
- 5 garlic cloves (peeled)
- 1 celery stalk (cut in half crosswise, reserve celery leaves for garnishing, optional)
- 1 onion (large, halved lengthwise from root to stem so it holds together)
- 1 whole clove (stick in the onion half)
- 2 rosemary sprigs
- 2 thyme sprigs
- 1 bay leaf
- 1 piece Parmesan (rind, if you have it)
- 2 1/2 tsp. coarse sea salt (or kosher, more to taste)
- 1 cup farro (rinsed)
- spinach (torn into pieces, optional)
