- 3 cups great northern beans (dried Bob’s Red Mill, – soak overnight, cover with water 2 inches above beans)
- 1 Tbsp. olive oil
- 1 white onion (large, chopped)
- 2 smoked chorizo (Spanish style, links, chopped, about 2 cups*)
- 6 cups chicken stock (use gluten free is needed)
- fine sea salt
- 1 bunch lacinato kale (stemmed, torn in pieces, massaged for a minutes to reduce bitterness)
- 1 cup manchego cheese (grated)
- 1/4 cup fresh parsley (chopped)
- 1 loaf crusty bread (good)
