- 8 cups water (lukewarm)
- 1 cup sugar
- 1 cup salt
- 4 chicken legs (boneless, I used 8 chicken thighs)
- 2 strips bacon (smoky, this is the alternative for those who don’t have a cold smoker – that’s me!)
- 5 cups pork fat (rendered, or grapeseed oil, I used grapeseed oil)
- 2 cucumbers
- 4 cups short-grain rice (cooked)
- 4 eggs (slow poached, recipe follows)
- 1/2 cup scallions (sliced, I used chives, I know – not the same but I didn’t have any on hand)
