- 600 grams chicken breasts (/thighs, chopped. I had 1 chicken breast and 2 thighs in the freezer, so used those!)
- 1 sweet potato (large, peeled and cubed into about 2cm squares)
- 4 garlic cloves (chopped finely or minced)
- 1 1/2 tsp. minced ginger
- 1 tsp. ground coriander seed
- 1 tsp. ground cumin
- 1 tsp. cayenne pepper
- 1 onion (diced finely)
- 1 red capsicum (diced)
- 100 grams baby spinach
- 400 grams diced tomatoes
- 2 cups chicken stock
- 3/4 cup natural peanut butter (organic/, normal peanut butter would work in a pinch but I recommend the natural stuff for cooking)
