- 2 lb. seedless watermelon (rind removed and cut into 3/4-inch dice)
- 2 peaches (large, pitted and cut into 3/4-inch pieces)
- 2 mini cucumbers (Persian thinly sliced)
- 3 Tbsp. champagne vinegar (I substituted lemon juice)
- 1/4 tsp. salt
- 1/2 cup feta cheese (or ricotta salata)
- 1 scallion (white and light green parts only cut into very thin strips, I omitted this)
- 2 lb. seedless watermelon (rind removed and cut into 3/4-inch cubes)
- 2 peaches (large, pitted and cut into 3/4-inch cubes)
- 2 mini cucumbers (thinly sliced, Persian cucumbers)
- 3 Tbsp. champagne vinegar (I substituted fresh lemon juice)
- 1/4 tsp. salt
- 1/2 cup crumbled feta cheese (or ricotta salata or goat cheese)
- 1 scallion (white and green part only, thinly sliced, I left this out)
