- 1 Tbsp. olive oil
- 1 tsp. black pepper
- 1 tsp. rosemary
- 1 tsp. basil
- 1 tsp. oregano
- 3 cloves garlic (crushed)
- 1/4 cup Parmesan cheese (use reduced fat for less calories)
- 1 1/2 cups fresh spinach (chopped)
- 2 stalks celery (diced)
- 1 small onion (diced)
- 3 carrots (diced)
- 14 oz. diced tomatoes
- 1 cup water
- 3 cups chicken broth (we use low sodium)
- Italian turkey sausage (cooked and crumbled, optional)

amazing!! it took only 10 min to prepare. didnt think cheddar was necessary so i skipped it and turned out very delicous and feels much more healthier :)

I have made this several times now and it is super easy and delicious! I recommend cooking the day before and serve the next day because the flavors really meld together nicely, also I f you use frozen spinach it can be a bit strong that first day. I add hot Italian turkey sausage and it isn’t too spicy but adds just a little something extra to it. I double up the recipe and it freezes great. I made a big batch and took it to work on a cold day and everybody loved it! It’s filling and satisfying and healthy. I recommend the frozen tortellini, I used the refrigerated ones once and they blew up huge and soaked up all the broth, it was still really good though!
