We had no butter or any kind of “buttery spread” so my three-year-old grandson and I gave it a try. Much better than anticipated. I got out the sour cream and let him add it. He added about 1/2 cup because he loves sour cream. Yummy actually.

It's hard not to miss the butter, but I still thought this was a fairly good substitute given how much lighter it is than regular mashed potatoes. The consistency was very good.
