- 8 lamb cutlets (small, well trimmed or trim and slice a rack, as I did)
- 50 mL olive oil
- 125 grams cheese (Frico Landkaas, @Woolworths in Oz)
- 1 cup panko crumbs
- 2 Tbsp. Dijon mustard (seeded)
- 2 Tbsp. chopped parsley
- 1 tsp. thyme (chopped)
- salt
- freshly ground pepper
- 500 grams fillets (skinless thigh, approximately 4 cut into 4 pieces)
- 150 grams cheese (grated Frico Landkaas, ½ packet)
- 1 onion (small, sliced julienne)
- 1 cup peas (defrosted, or sliced snow peas)
- 1 Tbsp. Dijon mustard
- 1 clove garlic
- 1/2 cup cream (thickened, / 125 ml)
- 3/4 cup chicken stock (/ 180 ml)
- 1/2 cup panko crumbs
- salt
- pepper
- 2 Tbsp. olive oil
- 1 Tbsp. thyme (chopped)
