First year of growing tomatillos in the yard, thus looking for great recipes to using them all up. Loved the freshness.

This tastes like all the amazing things of summer captured in one dish. It's sooooooo good! I did half on the oil and balsamic and it was still Plenty of dressing. I think if I'd done the full amount, there'd be too much moisture and the balsamic would overwhelm the other flavors. Don't skip the mint. It's super essential.

I really enjoyed it. The kids didnt like it with the mint and onion lol but I loved all the mixture of flavors.

It was a really refreshing salad. The flavor was too advanced for my 4 and 7 year old, but it was delicious. Next time I may leave out the shallots for the kiddos. This would be a great salad to take to summer bbq’s or picnics!
