Watermelon Sorbet with Vodka Fruit Salad

  • sorbet (Watermelon)
  • 1/2 cup sugar
  • 1 pound watermelon (puréed)
  • 1/4 cup lime juice
  • 2 egg whites (lightly whisked)
  • fruit salad
  • 1/4 cup vodka
  • 1 tablespoon sugar
  • 1 tablespoon lime juice
  • 9 ounces strawberries (finely chopped)
  • 1 Granny Smith apple (cored, finely chopped)
  • 7 ounces pineapple (finely diced)

    Directions

    1. In a small saucepan, combine sugar and 1/2 cup water. Stir over a medium heat until sugar dissolves. Simmer for 6-8 mins, without stirring, until mixture is syrupy. Remove saucepan from heat and allow to cool completely.
    2. Using a fine sieve, strain watermelon into a large bowl. Stir in syrup and juice. Fold in egg whites. Pour into an ice cream maker and process according to manufacturer's instructions.
    3. Pour mixture into a loaf pan, cover with plastic wrap and freeze for 3 hours until firm.
    4. Meanwhile, prepare the vodka fruit salad: In a small bowl, stir vodka, sugar and juice together until sugar dissolves. Place fruit in a bowl and pour over vodka mixture.
    5. Divide fruit among glasses and spoon over juices. Top with a scoop of sorbet to serve.
