- 4 lb. watermelon (1 small, rind removed, cut into 1” pieces)
- 1/2 cup rice vinegar (plus 2 tablespoons, unseasoned)
- 1/4 cup toasted sesame oil
- 1/4 cup teriyaki sauce (I use Coconut Secret brand, soy teriyaki may have gluten)
- 2 Tbsp. lime juice (juice of 1 lime)
- 4 Tbsp. tahini
- 1 Tbsp. nectarines (or amber agave)
- 2 Tbsp. sherry vinegar (GF)
- 2 tsp. kosher salt (milder than table or sea salt)
- 3 scallions (trimmed and thinly sliced)
- sesame seeds
- fresh cilantro leaves (optional)
- 2 cups coconut cream (I use So Delicious Original flavor)
- 1/2 stalk lemongrass (fresh, about 6” long, cut into thirds)
- 1 Tbsp. raw sugar
- 1 1/2 cups jasmine rice
- 3 Tbsp. avocado oil (or other high-heat oil)
- 2 lb. fresh green beans (trimmed, washed and patted dry)
- 3 Tbsp. minced garlic (I use Trader Joe’s jarred variety)
- 4 Tbsp. teriyaki sauce (I use Coconut Best brand)
- 3 Tbsp. lime juice (juice of 2 limes)
- 2 Tbsp. nectarines (or agave nectar)
- 1 Tbsp. raw sugar
- 2 tsp. ground ginger
- 1 tsp. kosher salt
- sesame seeds (for garnish, optional)
