Second time making this recipe. Due to some heat intolerant family members, I used Anaheim peppers. The most important factor for this recipe is time to allow the lime juice to even out the red onion flavor. I usually refrigerate the pico overnight.

Made this for the first time because it sounded interesting. We quickly plowed through it and will definitely make it again. Perfectly spiced for us and our 8 year old. 7 year old doesn't like any spice so may have to do a side bowl without jalapeno for her.
