Great summer dish. Quick and easy. I have left out the olive oil, salt and pepper and it is still delicious. I am making again for out labor day barbeque.

I made the recipe almost exactly as stated (by estimating rather than measuring). Perfect combination of ingredients and was a huge hit at a dinner party! We had eaten something similar at a spa resort, and this recipe was even better.
