- 1 Tbsp. extra-virgin olive oil (for sweet potatoes)
- 1/2 tsp. ground cumin
- 3/4 tsp. salt (for sweet potatoes)
- 1/4 tsp. black pepper
- 1/2 orange (juiced, for dressing)
- 1 Tbsp. extra virgin olive oil (or sunflower oil, for dressing)
- 1 Tbsp. apple cider vinegar
- 1 1/2 tsp. honey (plus more if desired)
- 1/4 tsp. salt (plus more if desired, for dressing)
- 1 dash cayenne
- 1/2 orange (peeled and roughly chopped, for topping)
- 2 Tbsp. dried cranberries
- 1/4 cup crumbled goat cheese
- 1 scallion (minced)
- 2 Tbsp. toasted pine nuts (optional)

Directions
- Preheat the oven to 400°F. Line an extra-large baking sheet with parchment paper.
- Arrange the sweet potato cubes on the baking sheet. Drizzle with the olive oil and sprinkle with the cumin, salt, and black pepper. Stir with a rubber spatula until evenly coated.
- Place baking sheet on the middle rack of oven.

I love salads & I love sweet potatoes so this is perfect. I added celery & a shallot. I also added a 1/4 teaspoon of pumpkin pie spice, a 1/4 teaspoonof mole powder & a garlic clove. I didn't have goat cheese or pine nuts so I used a vegan feta cheese & walnuts. Will double the dressing next time.

This was super fun to make and it was very good. The sweet potatoes and oranges were a unique combination.

This turned out delightful. Spicy yet sweet and flavorful. I added pumpkin spice because of the time and season. I also added chicken. Very simple to make. I unfortunately forgot the orange but it still turned out great! Would make again.

I baked the potatoes for 35 min and they were perfect. Paired really well mixed with rice and a tropical chicken I made. I was quite surprised about the flavor but happy I took the chance to try something new!

This recipe was a hit with my whole family, even with the person who doesn't normally like sweet potatoes. My only change was using cotija instead of goat cheese because it's a cheese we already had on hand.

Really good! I used feta cheese instead of goat cheese, but it still worked well!

I love a recipe that brings out the beautiful flavor of sweet potato. I tried this recipe using what i had at home at the time; sweet potatoes, orange, raisins, and feta cheese and it was super yummy!

it's a total comfort for dish; beautiful; with layers of flavor
