- 500 grams beetroot (baby, cut into wedges a similar size to the onion)

- 250 grams puy lentils (pack ready prepared, I used Merchant Gourmet)
- 200 grams rice (I use a mixture of wild and basmati rice from Tesco)
- 150 grams feta cheese (crumbled plus extra for garnish)
- 2 Tbsp. parsley (chopped finely plus extra for garnish)
- 3 Tbsp. balsamic vinegar
- salt
- pepper
- 6 Tbsp. olive oil
