- 1 red chilli (smalll hot, deseeded and finely chopped)

- 1/2 red onion (thinly sliced into half rings)
- 2 cups vegetables (eg pumpkin, sweet potato, snow peas, peppers)
- 5 oz. cherry tomatoes (halved)
- 2.5 oz. goats cheese (soft)
- 1/2 can chick peas (draiend and rinsed)
- 1/2 cup walnuts (roughly chopped)
- 1 handful fresh dill (roughly chopped)
- 1 tsp. apple cider vinegar
- 1 1/2 tsp. lemon juice
- 1/2 tsp. walnut oil
- 1/2 tsp. salt
