- 1 cup crumbled blue cheese (I used Kerrygold Cashel Blue)
- 1 cup all purpose flour
- 1/2 cup chopped walnuts (finely)
- 3 1/2 cups unbleached all purpose flour (preferably Gold medal)
- 1 cup dark rye flour
- 2 Tbsp. sugar (or honey)
- 1 1/2 tsp. instant yeast
- 1 tsp. coarsely ground black pepper
- 1/2 Tbsp. dried rosemary (or 1 tablespoon fresh rosemary)
- 1 1/2 tsp. salt
- 2 cups water (70°F – 90°F)
- 3 oz. blue cheese (I used Kerrygold’s Cashel Blue)
- 2 tsp. olive oil
