- 1 turkey carcass
- 4 qt. water
- 3 stalks celery (chopped fine)
- 2 onions (chopped fine)
- 2 large carrots (chopped fine)
- 1/4 cup long grain rice (uncooked, used quinoa)
- 1 cup butter (* See Note)
- 1 1/2 cups flour (* See note)
- 1 pt. half and half (OR 1 can evaporated milk *)
- 3 cups cooked turkey (diced)
- 1/2 tsp. poultry seasoning (if desired, optional)
