I enjoyed this with a little low sodium tamari and red chili pepper flakes. Its even better the next day.

I added less Vinegar and less water because I only had 3 Cucumbers and use purple onions. Good taste!

I really like this recipe it's simple and quick and full of flavor i really really enjoy it. I like to bring it as part of my lunch.
