- 2 mung beans (bundles, glass noodles, or 4 ounces thin rice noodles)
- 4 red chili peppers (Thai, to taste)
- 1 lemongrass (2-inch segment of, use white part of stalk, chopped)
- 3 garlic cloves
- 2 lime (juiced)
- 1 Tbsp. granulated sugar
- 1 Tbsp. fish sauce
- 1 Tbsp. soy sauce
- 1 cup fresh mint
- 1 cup cilantro leaves (fresh, and some stems)
- 1 cup thai basil (fresh)
- 2 cups greens (Vietnamese, see note or watercress)
- 1/4 cup roasted peanuts (chopped)
