- sea salt (½ teaspoon)
- neutral oil (sunflower or groundnut, 1½ tablespoons)
- sugar (1 teaspoon)
- ground turmeric (½ teaspoon)
- green chilli (large)
- 1 lemon
- meat (chicken thigh, 400g)
- celery stalk
- tenderstem broccoli (or purple sprouting, 100g)
- fish sauce (1 tablespoon)
- soy sauce (1 tablespoon)
- lemon juice (1 tablespoon, about half a lemon)
- spring onions
- ground white pepper (fresh if you can get it; I can’t so I used ground)
- jasmine rice (to serve)
