- We will start by making the Nems. We hydrate the mushrooms in very hot water for 10 minutes. We will also hydrate the noodles, which we will have previously "broken" with our hands when they are still dry, for three minutes also in very hot water. We lightly fry the minced meat. We chop all the ingredients, except the noodles, and chop them in the blender, incorporating the minced meat last. We mix with the noodles. With this mixture, we fill the spring roll leaves and form the rolls. We fry them in plenty of sunflower oil.
- To make the hot sauce we proceed in the same way. We put all the ingredients in the mincer and mix well. If you want the sauce not to be too spicy, remove the seeds from the chilli before grinding.
- To taste the nems, we roll them up with a lettuce leaf and some mint leaves. We are dipping them in the hot sauce.
