  • 2 spring onions (ends removed and sliced diagonally, + 1 thinly sliced for frying)
  • 1 cucumber (lebanese, halved and deseeded, sliced)
  • 1 cherry tomatoes (punnet of, halved)
  • 1 carrot (julienned into matchsticks)
  • 1 cup bean (shoots)
  • 1 cup coriander leaves
  • 1 cup mint leaves (vietnamese mint leaves if you can get it)
  • 1 red chilli (long, sliced, deseeded if too hot for you)
  • 2 tablespoons olive oil
  • 3 tablespoons white wine vinegar
  • 2 tablespoons soy sauce (gluten free)
  • 2 tablespoons stevia (dissolved in 1 tbs hot water)

    Thanks so much! i always loved this, now, making it the first time for friends on holiday in a small Estonian town without any form of real Asian market around I ended up playing around with the recipe a lot - caramelized soft bread for tofu ;-) - and still ended up with something quite similar in taste to the real deal I remember from Vietnam! And people even packed the leftovers for tomorrow. Next time hopefully with a few more "real" ingredients
