- 1/4 cup fish sauce
- 1 lime (Juice of)
- 1 Tbsp. demerara sugar
- 2 red chilies (thinly sliced)
- 1 clove garlic (minced)
- 4 pork blade steaks (bones removed & sliced thin)
- 2 shallots (peeled)
- 2 stalks lemongrass (tough outer leaves removed)
- 4 cloves garlic (peeled)
- 2 Tbsp. sunflower oil
- 1 lime (Juice of)
- 1/4 cup soy sauce
- 2 Tbsp. caramel (Vietnamese)
- 1 Tbsp. fish sauce
- ground pepper (Fresh)
- 8 bamboo (skewers, soaked overnight)
- 454 grams rice noodles (uncooked, rice vermicelli is traditional, but I used Bahn Pho because I like a wider noodle)
- 3 medium carrots (peeled & julienned)
- 4 Persian cucumbers (cut into chunks)
- 1 cup bean sprouts (fresh)
- 1/2 cup roasted salted peanuts (roughly chopped)
- 1/4 cup mint leaves (whole, tightly packed)
- 1/4 cup thai basil leaves (whole, tightly packed)
