- 1 white onion (large, finely chopped)
- 1 tsp. salt
- 1.2 kilograms braising beef (stewing/, cut into 1.5 inch cubes)
- 1 can chopped tomatoes (400g fresh tomatoes chopped)
- 1 1/2 tsp. Chinese five spice powder
- 3 Tbsp. fish sauce
- 1 1/2 tsp. brown sugar
- 3 star anise
- 1/2 tsp. paprika
- 2 Tbsp. ginger paste (minced fresh ginger)
- 1 Tbsp. garlic paste
- 1 bay leaf
- 2 lemongrass (halved and stalks removed, gently bashed)
- 300 mL coconut water (not cream or milk)
- 100 mL beef stock
- 2 large carrots (cut into into 1 inch pieces on the diagonal)
- 2 potatoes (medium/large sized, cut into 4/6 pieces)
- 300 grams rice noodles (medium or thick)
- 1 handful fresh mint leaves
- 1 handful coriander leaves (fresh)
- thai basil leaves (large handful of fresh)
- 100 grams beansprouts
- 2 limes (fresh, quartered)
- 1 handful fried shallots
- 1 fresh red chilli (finely sliced – optional)
